MY FAVORITE TURKEY MEATBALLS

Happy National Meatball Day!  And to celebrate.... we have meatballs - and wine.... but mostly meatballs (but more importantly wine)! ;)

Here is one of my favorite weeknight dinner recipes.  It's healthy.  It's quick.  And it tastes so yummy!

WHAT YOU'LL NEED (serves 5):
1/3 c. bread crumbs (I usually use Italian or if I don't have I just crush up croutons in a ziplock bag with a rolling pin)
2 tsp. olive oil
1/2 medium onion - finely chopped
2 cloves garlic - finely chopped
1 lb. raw lean ground turkey
1 large egg
1/4 c. finally chopped parsley (I sometimes use dried Italian seasoning as well)
2 tbsp. grated parm cheese
1 tsp dried oregano
1/2 tsp salt (I always use sea salt)
1/2 tsp pepper

DIRECTIONS:

1.  Heat oven to 425






2.  In a frying pan over medium head add olive oil, chopped onion and garlic.  Stir till onion is soft - approx. 5 min.  Remove from heat.

3.  In a large bowl add turkey, egg, bread crumbs, onion/garlic mixture, cheese, herbs & spices, and salt and pepper.
















4.  Get your hands in there and squish together till well combined.  Form into 1" balls and place on a cookie sheet lined with parchment paper














5.  Bake for 18 min. or until browned and cooked.

6.  Serve on a bed of rice, topped with pasta sauce.

**Tip: Double the recipe and freeze leftover meatballs for another dinner.
