THE BEST LASAGNA.... {EVER}

Looking for something to make for dinner tonight?  Friends coming over and need a dish able to serve 6?  Want to make something for your freezer that you can make ahead and only need to put in the oven when your needing something last minute?  This amazing Lasagna recipe is tried and true... it's also past down from my Mom (so we know it's amazing) - nothing beats Mom's cooking!

Prep Time = 45 min, Cook Time = 45 min
Serves 6

Ingredients:
2 lbs ground meat (we use moose - but beef works too)
1 onion - chopped
2 cloves garlic
2 tbsp olive oil
1 jar spaghetti sauce (1 Tin Tomato soup can be substituted)
1/4 c. ketchup
1/2 c. water
1 Tsp. salt
1 Tsp. pepper
1 tsp. oregano (or Italian seasoning)
1 tsp. vinegar
1/2 tsp. garlic salt
2 handfuls of fresh spinach
10 fresh mushrooms - sliced
2 eggs
1 container dry cottage cheese
Oven ready lasagna noodles (approx 10 noodles/1/2 Box)
Shredded mozzarella cheese (approx 1 med. block)

Directions:

1.  Preheat oven to 350.

2. In a frying pan add 1 tbsp olive oil on medium heat.  Add sliced mushrooms and saute till browned (approx 5 min) - remove and place in separate bowl.

3. In same frying pan add 1 tbsp olive oil on medium heat.  Add chopped onion and garlic.  Stir until onions are translucent (approx 8 min).











4. Add 2 lbs ground meat to onion/garlic mixture and brown on medium high heat.  Spoon any water out so meat browns.

5. Once meat is browned add spaghetti sauce (or tomato soup), ketchup, water, salt, pepper, oregano, vinegar and garlic salt.  Simmer for 30 minutes on low.

6. In a separate medium sized mixing bowl add dry cottage cheese and mix together with 2 eggs.












7. Now it's time to layer!  In a 9X13 glass dish layer:
          1/3 of the meat sauce (on bottom)
          noodles (approx 5 lasagna noodles)
          mozza cheese
          1/2 of the cottage cheese mixture
          fresh spinach
          sauteed mushrooms
          noodles (approx 5 lasagna noodles)
          remaining meat sauce (if you find there is too much meat sauce leave some out)
          remaining cottage cheese mixture
          mozza cheese


8. With toothpicks poke in lasagna and cover with tin foil (to create tent so cheese doesn't melt on foil).  Bake at 350 for 30 min,  Remove foil and bake for remaining 15 min (or until bubbly and cheese is broiled).   Let stand a couple minutes to set before serving :)  This meal goes great with a Caesar salad and garlic toast!
